The Food Safety Authority of Ireland (FSAI) ordered the establishment to stop using the vacuum packing machine, with the order served on January 8 and lifted on January 17.

During the inspection, it was discovered there was one vacuum packing machine in the premises and that raw fish was vacuum packed in the same machine as ready-to-eat foods, such as egg mayonnaise.

“The dual use of a vacuum packing machine for both raw and ready-to-eat foods presents a significant risk of ready-to-eat foods becoming contaminated with bacteria,” the order said.

Another reason for the partial closure order was a lack of documented cleaning and disinfection procedures or a cleaning schedule in place for the vacuum packer.

There were a total of 11 enforcement orders served on food businesses in January for breaches of food safety legislation, issued by the HSE Environmental Health Officers.
